SODA BREAD
So good, hot from the oven. Try soda bread with quark, tofu, or yogurt cream- cheese and your homemade jam for a breakfast or afternoon tea treat.
2 cups whole-wheat flour
1 tsp baking soda
1 tsp cream of tarter
½ tsp salt
1 cup buttermilk
1. Preheat oven to 425˚F (200˚C)
2. In large bowl, mix together dry ingredients.
3. Make a well in centre, add buttermilk.
4. Using a wooden spoon, beat until dough is elastic.
5. Shape into a round 1 ½ in. (7.5 mm) thick, flatten top.
6. Place on a floured baking sheet, with a sharp knife score top into six wedges.
7. Bake 25 min. until lightly browned.
Serve warm or cool. Makes excellent toast.
For a change of pace:
• Add fresh or dried herbs to flour and serve with a hearty soup.
• Add 1 Tbsp (15 ml) brown sugar and ⅓ cup (75 ml) raisins or dried cranberries
to dry ingredients for a treat.
