PIZZA

You can make and bake this pizza in the same time it takes to choose toppings, herbs, and spices while avoiding additives and excess salt. Invite everyone to participate in prep and assembling, then toss a salad while the pizza bakes. 

Sauce
5 oz can tomato paste
¾ cup warm water
3 cloves garlic
½ tsp of each dried oregano, marjoram, basil
½ tsp freshly ground black pepper
½ tsp chili flakes
 

Toppings
1 small onion
1 small green pepper
6 mushrooms
2 Roma tomatoes
8 basil leaves
8 oz mozzarella cheese
freshly ground black pepper

1. In a small bowl combine the sauce ingredients and mix well.
2. Let stand for 30 min. to allow flavours to blend.
3. Wash and thinly slice onion, pepper, mushrooms, and tomatoes. 
4. Grate cheese.
5. Preheat oven 400˚F (260˚C).
6. Spread pizza sauce evenly over dough.
7. Arrange sliced onion, peppers, mushrooms, and tomatoes.
    Season with freshly ground black pepper.
8. Sprinkle cheese evenly over vegetables and top with torn basil leaves
    or sprinkle ½ tsp (2.5 ml) dried basil.
9. Bake at 500˚to 400˚F (260˚C) for 8–12 minutes

EXPERIMENT WITH OTHER TOPPINGS: 
• Sliced onion, spinach, tomato, black olives, and feta cheese.
• Sliced red onion, yellow pepper, cooked chicken breast, mushrooms,
   and asiago cheese.
• Sliced onion, leek, tomato, raw shrimp, black olives, and Emmentaler cheese. 
• Sliced onion, peppers, crumbled soy, tomato, and soy cheese. 

TIPS:   
• Triple the pizza sauce recipe label and freeze in two portions.
• Great way to use leftover vegetables with onion, fresh tomato and cheese.
