SIMPLE BANANA BREAD
Easy, delicious, moist and quick to make—what could be better for a treat that bakes while you cook dinner. This is my go to loaf in a hurry.
1 cup whole-wheat flour
¼ cup oat bran
1 tsp baking soda
¼ cup raisins or chopped walnuts
½ tsp ground cinnamon
½ tsp ground ginger
2 large ripe bananas2 eggs
½ cup olive oil
1 tsp vanilla
½ cup brown sugar
½ cup unsweetened applesauce
1. Preheat oven to 350˚F (180˚C).
2. Lightly oil and flour a 5x9 in. (13x23 cm) loaf pan.
3. In a large bowl mix dry ingredients and raisins and nuts.
4. In a medium bowl, mash bananas, add remaining ingredients, mix well.
5. Add to dry ingredients, stir until blended.
6. Pour into loaf pan.
7. Bake 60 min., cool on wire rack.
TIPS:
• Freezes well up to three months. Wrap and label loaves when cool.
• Mash two ripe bananas, label, freeze in airtight container for future use.
Thaw overnight prior to use.
• Bananas are high in potassium, but also high in sugar. Eat in moderation.
